It was silly of me to install Vista over my existing XP rather than waiting for my new & 2nd HD to arrive - but I did it.
I got the new drive and installed Vista from scratch on it.
Now I can not boot into the first Vista installation (the one I did over my XP).
What is the best (i.e., fastest) way to get the dual boot working?

Dual boot not working - my mistake
From a XP installation install Vista on second HD (again install from within XP) - Vista will (should anyway) set up a dual boot situation. I am sure you will remember to never install beta software as an upgrade.
